Lasagna With a Tex-Mex Twist

I think the sour cream and green onions on the top of this dish is what my wife loves most about it. My daughter said its her second favorite dish she's ever ate (she loves regular lasagna, that's her number one.) Fudge Ripple (Mix-In for Homemade Ice Cream)

This is from David Lebovitz's wonderful book "The Perfect Scoop." If you make ice cream at home, you gave to have this cookbook! He advises to add this to ice cream this way: coat the bottom of your container with fudge ripple, then add ice cream, layering it with generous amounts of ripple. Don't mix or you'll have muddy ice cream instead of rippled ice cream. Creamy American Chop Suey

I grew up eating the never ending pot of American Chop Suey. My mother would just add more tomatoes and pasta to it until I thought I would gag at the thought of one more dinner of it. Thing is, I wanted to have it when I got older after trying other people's versions, so I found some recipes and glued together this. It is creamy because of the cheese, but if you don't like it, you can have it "regular". Chicken in Tropical Fruit Sauce

I found this recipe many years ago and adapted it to what we had on had and honestly, what I could find fairly cheaply. Every single person I have served it to loves it, and I do too! Add different fruits if you wish, just make sure you add softer fruits at the end and just heat through to avoid a broken up mess. Bananas should be just yellow so that they are sweet but hold their shape. The applesauce is supposed to be the chunky type, but I haven't been able to find that in the market in years, so use your own or just use the regular as listed. Boneless chicken thighs taste good here too, no need to use the more expensive boneless breasts. Mangos are good in here too, and any sort of berry is good. Frozen even works, but they are more fragile, so you have to be more careful about how you add them. -- posted by Jennifer Michele

Olive Oil Packed Sun Dried Tomatoes With Basil

Dehydrated tomatoes have a rich bold flavor that when combined with olive oil and basil. The bonus with packing in olive oil is you get both tomatoes and olive oil flavored with the dried tomatoes. The oil is great for salad dressing, dipping bread or making pasta or any other recipe calling for sun dried tomatoes.Note: Dried tomatoes in oil are less of a safety concern than low acid vegetables, like garlic mixtures in oil, because the pH of tomatoes is generally 4.6 or lower. In addition, by drying the tomatoes, conditions become even less favorable to growth of C. botulinum due to a decrease in water activity. However, to ensure safety, it is recommended that all tomato in oil and herb in oil products be stored at refrigerator temperatures and eaten within a month. Egg(Less) Nog

I've been looking for a simple no-cook egg nog using egg substitutes. This sounds easy enough: no cook, blend, chill and serve. The recipe called for 1 cup non-dairy creamer (not my favorite), so I'm going to add some chia seeds to give it more body. Easy Homemade Noodles

It just takes a few minutes to make wonderful, homemade noodles. All you need is flour, egg and a pinch of salt 2 tablespoons of milk. What a tasty addition to fresh chicken soup! My grand kids love these noodles in chicken broth with shredded chicken. If you are in a hurry you can drop little chunks of the mix into boiling broth instead of rolling, cutting, and letting dry. Rutabaga Home Fries

Home fries made lower carb by using rutabaga rather than starchy potatoes. This can be made vegetarian or vegan based on what you add to the 'bagas while they are cooking. Roasted Vegetable Stock 2013

This recipe was originally inspired by Chef Kate's recipe. I've experimented with and modified this recipe at least a dozen times over the years, and I've found that using parsnips instead of carrots is crucial. Carrots make it too sweet. Instead of using portobello stems, you can use maitake or shiitake stems or stem pieces (they keep for a long time in the freezer).My wife is a carnivore and she likes this recipe a lot. It is perfect for french onion soup. For black bean soup in the winter, there is nothing better. In fact, in the winter there is nothing better than a half a coffee mug of this stock nuked for 40 seconds or so (it's very rich and satisfying). Try it with African peanut soup, or wild mushroom risotto, instead of chicken stock. Or, if you're a Trekkie and want to celebrate First Contact Day, omit the (optional) Parmesan rind to keep it vegan, and make plomeek soup (http://thefreedomchef.com/leek-soup/, but add a "tea" from a few ginger slices and some pepper flakes, to cut the sweetness, add flavor, and add a gentle hint of spice)! -- posted by Teukros
