Roasted Vegetable Stock 2013

This recipe was originally inspired by Chef Kate's recipe. I've experimented with and modified this recipe at least a dozen times over the years, and I've found that using parsnips instead of carrots is crucial. Carrots make it too sweet. Instead of using portobello stems, you can use maitake or shiitake stems or stem pieces (they keep for a long time in the freezer). My wife is a carnivore and she likes this recipe a lot. It is perfect for french onion soup. For black bean soup in the winter, there is nothing better. In fact, in the winter there is nothing better than a half a coffee mug of this stock nuked for 40 seconds or so (it's very rich and satisfying). Try it with African peanut soup, or wild mushroom risotto, instead of chicken stock. Or, if you're a Trekkie and want to celebrate First Contact Day, omit the (optional) Parmesan rind to keep it vegan, and make plomeek soup (http://thefreedomchef.com/leek-soup/, but add a "tea" from a few ginger slices and some pepper flakes, to cut the sweetness, add flavor, and add a gentle hint of spice)! -- posted by Teukros

Roasted Carrots (America's Test Kitchen)

Don't use baby carrots for this. The water content is too high. If your carrots are really small/narrow, you won't need to halve the narrow ends. Do watch the times, tho. My narrow carrots were done in 20 minutes (total time) versus the regular 45 - 50. -- posted by Debbie R.

Roasted Broccoli and Brussel Sprouts

The vegetables get so nutty and caramelized and the lemony vinegarette makes it fresh and delicious. It is great hot, warm, or even cold. Great tossed with a hearty green like spinach, arugula or watercress. -- posted by under12parsecs

Campanelle With Roasted Grapes and Feta

There's nothing more satisfying than a hot and healthy meal at the end of the day. This one is quick to prepare, but doesn't skip on any of the flavor. Roasting grapes will enhance their taste and provide a low-cal sweetness to the tangy feta. And the fresh thyme adds the perfect finishing touch. Liven up this pasta dish by tossing in roasted grapes and feta. Not only will you have a filling meal, the grapes will help with indigestion and fatigue. Double the health benefits of grapes by using white wine in the simple pasta sauce. -- posted by ElizabethKnicely
